What's to Eat at the Harambee Festival

TALLAHASSEE, Fla. (WTXL) -- Sunday is the Harambee Festival at Cascades Park, complete with music, dance, art - and cooking classes!

Sharon Ames Dennard, co-owner of Nefetari's Fine Cuisine, is hosting a cooking class in the Meridian Building at Cascades Park as a part of the Harambee Festival.

She joined us on WTXL Sunrise with a taste of what we can expect, showing us the Queen's Frittata.

Organizers say, "The Harambee, a Swahili word meaning, 'let’s pull together,' will be a catalyst to connect Tallahassee residents as we work together to make a difference in our community."

Here's Sharon's recipe for Queen's Frittata:

- 1/8 cup olive oil

- 6 large Organic Eggs

- ¾ Cup Half & Half Cream

- ¾ Cup Heavy Cream

- ½ tsp sea salt

- ½ tsp rosemary

- ½ tsp garlic

- ¼ tsp black pepper

-½ tsp lemon curry

- 8 oz of Portobello mushrooms

- 1 cup sliced white onions

- 2 cups organic spinach

- 1 ½ cups smoked gouda cheese

- 2 cups sweet/red/white potatoes

- ½ cup zucchini

- ½ cup yellow squash

Preheat oven to 425 degrees F.

Cut potatoes into cubes and boil until tender, remove from heat, drain and set aside. In a large skillet pan sear vegetables in olive oil and spices until tender; set aside.

In a mixing bowl combine eggs, half &half, heavy cream and smoked gouda; stir until evenly distributed.

Assemble the Frittata by lining the skillet with potatoes, then top with vegetable mixture followed by egg/cream/cheese mix. Use a spoon to evenly distribute mixture.

The Harambee Festival is Sunday, February 28 from 11 a.m. until 7 p.m. at Cascades Park. It's free to take part and all are invited.
