TALLAHASSEE, Fla. (WTXL) - This morning on WTXL's "What's to Eat" we were making some sandwiches that will give you a break from the cold weather with a taste of summer.
Chef Amadeus joined us from Jacksonville, Florida to teach us how to make a Dulce de Leche Crusted Chicken Sandwiches. The Chef is a Jacksonville native but has traveled across the country, working on his culinary skills as he went.

Here is the recipe Chef Amadeus cooked for us this morning:
Dulce de Leche Crusted Chicken Sandwich with Sofrito Mayo
4 hamburger buns toasted
4 boneless chicken thighs
8 -10 oz Dulce de Leche
Lil Bump to taste
Chino 5 to taste
Sofrito
1 tomato diced
1 small onion diced
1small green pepper diced
3 cloves garlic
1/2 bunch cilantro
1 tsp Lil Bump or to taste
1 tsp Dos Maria (curry powder) to taste
Olive oil
Kosher salt
Fresh lime juice
5 tbs mayo
Spread Dulce de Leche over chicken thighs
Sprinkle with Lil Bump & Chino 5
Sear on each side for 3 to 4 min
Sofrito mayo:
In a food processor or Pilon add sofrito ingredients, and pulse
In a bowl add mayo, about 2 tbs sofrito,
Dos Maria (curry powder) and fresh lime juice
Spread mayo on toasted buns
Add seared chicken
Serve with diced pineapple
